BLACK BEANS
Part One
1 pound of dry Black Beans
1/2 green pepper
Clean and pick beans, add enough water to cover at least twice the volume of beans. Either soak overnight, or boil and remove from burner letting it sit at least 2
hours.
Place in pressure cooker with the green pepper at medium heat. When the top of the cooker starts whistling for 10 minutes remove it from the heat. Place the
pressure cooker under running water and allow steam to escape. Be very careful when you open the cook. If you beans are soft, you are done.
Part Two
1/2 cup of olive oil
1 chopped onion
1 chopped green pepper
1/2 head of garlic peeled and smashed in a mortar
3 bay leaves
1 tsp. of ground black pepper
3-4 tsp. salt or to taste
2 tsp dry oregano
2 tsp comino seed
2 tsp dry basil
2 tsp of wine vinegar
Mash the oregano, comino seed and the basil in a mortar.
Combine ingredients in a frying pan and cook for ten minutes. Add
to black beans with the wine vinegar, olive oil and simmer for 20 minutes.

ROPA VIEJA "Old Clothes"
Part One
3 lb of Flank Steak
1/3 cup of olive oil
1 tsp of salt
1 tsp oregano
1 tsp of thyme
1 tsp of sweet paprika
4 cloves of garlic
4 tbsp wine vinegar
Mash garlic with salt in mortar adding spices to make a paste add oil and vinegar. Blend. Pour over meat and marinade for an hour if possible.
Brown in a pot with about 1/3 cup of olive oil and brown on both sides.
Chop an onion and add to meat together with 1 1/2 cup wine and 1 1/2 cup water.
Cook at medium heat until done.
Remove meat from pot and cool.
Either shred or cut against grain into thin slices.
Part Two
"The Sauce"
1/3 cup olive oil
1 onion
2 garlic cloves
1 green pepper
1 (8oz) tomato sauce can
1 bag leaf
1/2 cup wine
1 4oz pimentos
Slice Onion in thin strips, green peppers in thim strips. Add to oil with garlic and the rest of the ingredients.
Add cooled sliced or shredded beef to sauce. Cook for 30 minutes and serve with white rice or boniato.

4-5 large garlic cloves
3/4 cup of olive oil
Salt
Pepper
Mash garlic in mortar. In a small pan, heat oil till very hot. Add hot oil to garlic in mortar. Season this oil with salt and pepper. Pour over Yuca
